Time to make Salsa

It’s only September 12 and they are already predicting a chance of frost tonight. It doesn’t look like a strong chance, and most of my harvest is already in, but I think I will cover my cantaloupe and  tomatoes. The tomatoes are producing so prolifically (see photo) that we will be picking all the ripe ones today and making up some fresh salsa.

Quick and Easy Salsa

  • 1 (14.5 ounce) can whole peeled tomatoes, drained. (0r fresh if available)
  • ¼ c chopped red onion

  • ¼ c chopped onion
  • 1 T cider vinegar
  • 1 T minced fresh cilantro
  • 1 clove garlic, peeled
  • 1 t ground cumin
  • ¼ t salt
  • 1 jalapeno, seeded (optional)

Place all ingredients into food processor. Pulse until mixed and chunky. Serve with tortilla chips.
